Darryl is the heart of our kitchen — a big teddy bear of a man with a laugh as rich as his Appleton Reserve and a gift for creating meals that guests remember for life.\n\nHis culinary style is as vibrant as our island — blending Jamaican, Hakka Chinese, Cuban, Italian, American, and Continental influences into every “No Menu Dinner.” These family-style meals are served under the stars, where guests gather around one table, share stories, and experience Jamaica through taste, laughter, and music. Darryl’s dishes — from jerk shrimp and oxtail stew to his secret curry lobster — have become part of The Blue House legend.\n\nBut beyond the flavors and accolades, The Blue House is about purpose. After a major spiritual rebirth over a decade ago, I was led to start Bread Basket Ministries, a Catholic nonprofit charity that serves destitute children, families, and the elderly in our surrounding community. Each guest stay helps us build homes, feed families, and extend love beyond our walls. It’s a daily reminder that hospitality isn’t just about service — it’s about service with heart.\n\nOur success has never come from chasing trends. It’s been built on relationships, repeat guests, and moments of kindness. When travelers tell us, “This feels like home,” that’s the highest compliment we can receive.
